Advent Calendar - Melted Cheese Dip - Dec 17

If you are entertaining this holiday season here is a great recipe to make and serve on a cold night. If you are entertaining at home with just your family, this will be something special and different and not too difficult to make.  Serve it warm with big tortilla chips.

I like it with a side of red wine and a Lifetime Holiday movie!

Warm Melted Cheese Dip

  • 2 Tbls salted butter
  • 1 cup onion, finely chopped
  • 1 cup cream cheese
  • ¼ cup mayo
  • 2 tsp cornstarch
  • 2 cup  cheddar cheese, coarsely grated
  • 2 Tbls chives, finely chopped
  • 2 Tbls pepperoncini, finely chopped
  • Serve with tortillas

Preheat oven to 375 degrees Heat butter in a medium skillet over medium heat.  Cook onion, stirring occasionally, until golden brown and softened 8-10 minutes, let cool. Set aside 2 Tbls to use as a garnish.

Mix cream cheese and mayo in medium bowl until smooth.  Toss cornstarch, cheddar and cooked onion, season with salt and pepper.  Scrap into a baking dish and bake until golden and bubbly 20 to 25 minutes.  Let it cool 5 minutes then top with chives, onions and pepperoncini.  Serve with tortillas and crackers.
