Recipes- Backyard Patch Salt Free Lemon Chive Dressing
Pasta Party Confetti
1 ½ to 2 cups small shaped pasta (wagon wheel or orzo, acini di pepe, ditalini, bow tie, etc.) cooked according to package directions
2 – 3 red, green or yellow bell papers, seeded and finely dices
1 medium cucumber, seeded and finely diced
1 medium carrot, finely dices
2 -3 scallions (green and white parts) finely sliced
¼ cup fresh chopped parsley
½ cup extra- virgin olive oil
3 Tbls. lemon juice
1 clove garlic, finely chopped
1 ½ Tbls. BYP Salt-free Lemon Chive Dressing Herb Mix (Or follow dressing #1 instructions on package)
Combine cooked pasta with vegetables in a large bowl. Whisk together the dressing ingredients and pour over pasta mixture. Toss to combine well. Serve warm, chilled or at room temperature. This is a great picnic pleaser. It is light, fresh tasting and packed with vegetable flavors.
Lemon Chive Butter Sauce
This sauce adds a flavorful buttery taste with lemon and chives flavors to your chicken, fish or vegetables that will impress your guests as well as your family.
1/3 cup butter
3 tablespoons (entire package) Backyard Patch Lemon Chive Dressing
1 tablespoon lemon juice
1/2 teaspoon salt
Dash black pepper (ground)
Melt butter over low heat in a small saucepan. Stir slowly through all steps of the recipe to avoid burning the butter. Add remaining ingredients and heat through.
Serve hot with broiled or grilled chicken, baked fish, asparagus, or vegetables of your choice. Add one tablespoon of chopped fresh parsley to the sauce if you like.
