Herb & Chicken Salad
1 cup chopped cooked chicken
1/4 cup almonds
1 1/2 tsp. Backyard Patch Poultry Seasoning
mayonnaise
rye bread
Combine ingredients using enough mayonnaise to moisten. Serve with pineapple slices or spread on rye bread. Garnish with watercress.
Fruit and Nut Stuffing
This vegetable and fruit seasoning is a nice alternative to sausage stuffing.
8 slices of fresh or day-old white sandwich bread
2 eggs
½ cup milk
2 Tbls. Butter
1 cup apples, peeled, cored and chopped
1 salt celery, chopped
1 small onion, chopped
½ to 1 cup walnuts
1 large can mandarin oranges, strained
½ cup orange juice
1 tsp. Minced orange peel
½ tsp. Backyard Patch Poultry Seasoning
Slice bread into ½-inch cubes and put in a roomy bowl. In a small bowl, whisk together the eggs and milk. Add to the bread and mix well. Melt the butter in a skillet. Add the apples, celery and onion and sauté until soft, about 5 minutes. Add to the bowl with the bread and mix well. Add the walnuts, oranges, orange juice, orange peel and seasoning and mix until thoroughly blended. Place in casserole dish and cover with a lid or foil and bake at 350 degrees for 45 minutes. Remove the cover or foil for the last 5 to 10 minutes of baking for a nice golden color. If you would like to cook the stuffing in the turkey, loosely stuff the cavity after the turkey has been roasting for 45 minutes. There will probably be extra stuffing so bake it in a small baking dish.
