++Grilled Bruschetta Chicken++

  • 4 small boneless chicken breast halves
  • 1 tomato finely chopped
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup olive or vegetable oil blended with 1 1/2 Tbls Backyard Patch Garlic & Herb Combination

Place large sheet of heavy-duty foil over half of grill grate. Pour 2 Tbls. of Garlic and Herb Combination in oil over the chicken breasts in a plastic bag. Turn bag over a few times to coat chicken thoroughly. Refrigerate 10 min. to marinate. Remove chicken from marinade (discard excess marinade).

Grill chicken on uncovered side of grill for 6 minutes. Meanwhile combine cheese, tomatoes and remaining 2 Tbls. Garlic and Herb Combination in oil. Turn chicken over and place cooked side up on foil on grill. Top evenly with tomatoes mixture. Close lid. Grill an additional 8 minutes or until chicken is cooked through (170 degree internal temp.)
